Old Fashion Peach cobbler
INGREDIENTS
4 15oz cans sliced peaches
2 cups sugar
1/2 stick butter
1 teaspoon cinnamon
1/4 teaspoon vanilla
Tablespoon brown sugar
1 1/2 cups Self rising flour
1 1/2 cups Milk
1 Tablespoon Cornstarch
1/4 cup water

Preheat oven to 375° Mix flour, milk, 1/2 teaspoon cinnamon and 1 cup sugar in a bowl. It should be the consistency of pancake batter. Add half of the butter to a glass baking dish and allow to melt in oven. Mix peaches with 1 cup sugar, vanilla, 1/2 teaspoon cinnamon and remaining butter (melted) In a small bowl whisk together a heaping tablespoon of cornstarch with 1/4 cup water and add to the peach mixture. Pour the batter into the baking dish then gently spoon in the peaches along with the juices. Mix tablespoon brown sugar with a pinch of cinnamon and sprinkle a little over the top (optional) Bake at 375 for about 40 - 45 minutes Best served with a gigantic scoop of vanilla ice cream
